JHINGA SHRIMP CURRY

A popular prawn curry of northern part of India served as a main course along with steamed rice

Serves: 6

Ingredients:

1

lb shrimp

1

tbsp oil

1

medium onion, chopped

2

cloves garlic, crushed

4

cups plum tomatoes, chopped

2

tbsps fresh lemon juice

1/2

tsp coriander powder

1/4

tsp ground ginger

1/8

tsp freshly ground black  pepper powder

1/4

tsp cumin powder

Method:

  • Peel and get rid of the veins in shrimps. 
  • Heat oil in a large skillet
  • Add onion and garlic, sauté until softened. 
  • Add tomatoes, lemon juice and spices. 
  • Bring to boil, reduce heat, cover and simmer for 15 minutes. 
  • Add shrimp and cook 3-5 minutes, or until cooked through. 
  • Serve hot
