Make your own Jamaican Easter bun and Toto


Easter bun and cheese are an absolute must for Jamaicans during the Easter season.  Bun is served at anytime and with anything! …. Combine with cheese for breakfast, lunch and dinner. While you can choose from a variety of commercially made buns, there’s nothing quite like a homemade bun.


1 1/2 cups brown sugar
3 cups flour
2 tsp baking powder
1 cup stout (preferably Dragon Stout)
1 tbsp honey
1 cup mixed fruits (e.g. raisins, chopped prunes, maraschino cherries, currants)
1 1/2 tbsp melted butter or margarine
2 eggs
1 tsp mixed spice (or 1/2 tsp nutmeg and 1/2 tsp cinnamon)


Heat stout, sugar, butter, honey and spices over low flame, stirring until ingredients are dissolved in stout

Pour in mixing bowl and add eggs and mix well

Sift flour and baking powder

Add gradually to mixing bowl

Add fruit and mix well

Bake in a greased and floured loaf pan at 350F for 1 hour

All ready to serve with cheese, butter, or all by itself


Toto (pronounced toeto).  It’s a heavy, delicious coconut cake.

1 cup sugar
2 cups flour
2 tsp baking powder
1/2 tsp cinnamon
1/2 tsp nutmeg
2 cups grated coconut
2 tsp vanilla
1/4 lb margarine or butter
1/2 cup milk
1 egg, beaten
grated rind of 1/2 lime
a few drops of browning


Mix butter and sugar into a creamy consistency

Sift together flour, baking powder, cinnamon and nutmeg in a deep bowl.

Add lime rind and grated coconut and mix well, until coconut is evenly distributed through the mixture

Add to creamed butter and sugar. Mix in egg, vanilla and browning. Add milk slowly, until mixture is fairly stiff dough Bake in a greased pan at 350F for 1/2 hour

Cut into squares or slices and serve
