Barbecue Chicken with Guava Rum Glaze

8 – 10 chicken pieces (skin on)

 

For the marinade

 

1 cup unsalted tomato puree

½ cup dark brown sugar

½ cup cider vinegar

¼ cup vegetable oil

1 tablespoon Worcestershire sauce

Juice and zest of large lime

1 teaspoon thyme

1 teaspoon ground pimento (all spice)

3 cloves minced garlic

2 stalks scallion, finely chopped

1 scotch bonnet pepper deseeded and finely chopped

1 medium onion, grated

½ teaspoon coarse salt

 

Guava Rum Glaze

 

4 tablespoons unsalted butter

4 guavas, thinly sliced and seeded (skin on)

(Substitute ½ cp of crushed pineapple if guava is not available)

1 cup dark brown sugar

1 cup dark rum

½ cup orange juice

½ cup unsalted tomato puree

Juice and zest of 1 large lime

  1. Combine all the marinade ingredients in a bowl and whisk until sugar is dissolved
  2. Pour over chicken and refrigerate for 3 hours
  3. Remove chicken from marinade and cook on pre-heated, lightly oiled, barbeque grill, turning frequently until cooked
  4. Transfer to serving platter

 

 

To make the Glaze

  1. Melt the butter in a saucepan over medium heat, add the guavas and cook for 3 to 4 minutes
  2. Stir in the remaining ingredients and simmer over medium heat until thick and flavourful
  3. Pour over chicken and serve immediately
